Pricing

In the Spring of 2024 we started working with a USDA inspected butcher. This allows us to have our beef cut and packaged for individual sales. Instead of only selling by the 1/4, 1/2 or whole we are now able to sell smaller amounts and by the individual cut or pound. With that we have changed our pricing from $4.50 -$5 per lb hanging weight plus fees, to a set $9-$12 per lb price. I'd like to breakdown how the actual difference between $5 lb hanging weight and $10 in a package works out. 

A whole beef hangs around 700 lbs

350 per 1/2 and 175 per 1/4.

a 175 1/4 would run $875

1/4 of the harvest fee $50

Cut/wrap fees $196.56

Total Cost $ $1121.56

Packaged weight for 175 lbs is around 62%, so 108.5

Total cost, $1121.56/108.5 = $10.33 per lb 

Our new regular price is $9 per lb for ground beef and $12 per lb for mixed boxes.
